There are strict rules when it comes to most things that involve the Jewish faith. You will find specific instructions from God to the Hebrews in the Old Testament regarding everything from the food they eat to the hours that they worship. Orthodox Jews still follow these laws. When transporting Orthodox products there are very strict procedures to follow. A kosherization is not required unless rail cars have previously transported non-kosher or non-sourced products. Any car that is already in kosher service is exempt from the procedure. Kosherizations are temperature specific cleanings. They must be completed prior to any orthodox product being placed in a car. An orthodox union rabbi is usually required to attend the kosherization in order to certify that the proper protocol was carried out.

Before the process can begin the rail car has to be thoroughly washed. This includes gauges and valves that come in contact with the interior of the car. There aren't specific requirements for the washing other than the process must include using a caustic detergent that is strong enough to completely rid the car of any residue of previous products carried in it.

Nothing requiring kosherization may be heated for twenty-four hours prior to the kosherization. If the initial washing includes hot water, it must be done the day before the procedure. Routine maintenance and any repairs necessary may be done during this time, as long they don't require hot water. After the cleaning is approved, the kosherization can begin.

There are two kosherization methods. One is steaming. This method requires the whole interior of the rail car to be steamed, including the siphon pipe. The vapor from the steam, exiting the pipe, has to maintain a temperature of 200 degrees for a period of thirty seconds. Any valves, including the blow off valve, and gauges must be boiled at a 200 degree temperature.

To bake the interior of the car, the metal heat must reach four hundred degrees and remain at that temperature for two hours. The blow off valve, manway lid, and siphon pipe has to be heated the same way. It is permissible to place them in the car while it is heating. They may also be put in a separate oven.

If the interior of the rail car needs wiping down after a kosherization, crews must only use oil that has been approved by the orthodox union. After a kosherization is completed, the seal numbers of any valve products will pass through have to be sent to the office of the orthodox union. Once received, the office will issue a kosher certificate.

Once everyone understands these procedures, they can be done routinely. It is very important to closely follow protocol. Even in a instance where a field rabbi is not required, it is usually a good idea to insist of having one present.
